
Wash the brinjal thoroughly

Dry them

Slit till half the length don't remove salk

Take a plate add salt, chili powder, cumin powder and coriander powder

Mix well

fill the mixture in the brinjal

Take a pan heat oil

Add brinjal deep fry or sallow fry them as per your choice

I fifer sallow fry cover the lid Fry till they are 80% done

Flip them gentlt

Remove into a plate
take a pan add oil 1 tsp heat them

Add fenugreek seeds , cumin , coriander seeds , groundnuts , sesame seeds , poppy seeds ,

Saute till they slightly change color

Add grated coconut

Saute for 2 more minutes

Remove to a blaender

Make a smooth paste
Take a pan heat oil

Add bay leaves , mustard seeds , green chili , few curry leaves , saute till green chili are wilted

Add ginger , garlic paste saute till raw small goes off

Add onion paste mix well

saute till oil separates

Add the grinned paste mix well

Add coriander powder, cumin powder, turmeric powder, red chili powder and salt

Saute till oil separates

Add tomato paste mix well

Saute till the gravy thickens and oil separates

Add kasuri methi and jaggary

Add tamarind pulp mix well

Add water adjust to consistency mix well

Add the fried or roasted brinjal

Mix gently cover the lid

Cook for 5 to 6 minutes
Garnish with coriander leaves

Now bagara baingan is ready

Serve with chapati and rice .
