
Clean and Wash chana dal

Take a pressure cooker add chana dal water salt and turmeric powder don't use to much water

Pressure cook chana dal for 4 to 5 whistles or until cooked the soft do not overcook the dal since it will make the puri mushy

Let cooker cool and drain all the water from cook chana dal

It is up to you to mash it or leave it grainy as per your choice
Heat oil a wide bottom pan

Add hing, cumin seeds let it splutter

Then add chopped onion

Fry till it turns brown

Add crushed ginger, garlic and green chilli

Fry well

Add all spices and saute it for 3 to 4 minutes

Add bioled chana dal

Mix well

Add chopped coriander leaves

Mix well

Cook for about 4 to 5 minutes stir till dry

Transfer into a plate and keep aside to cool

Place wheat flour in a bowl, add salt, hing, kalonji and ajwain and oil and mix well all the ingredients
Add required amount of water and knead into a nice dough

Rest the dough covered with a damp cloth for about 10 minutes
Divide the dough into lemon sized balls

Pick a blob of kneaded atta and roll it into a sphere with your palm, press and flatten and help of both thumbs start the edges and create a dent in the center

Place 1 or 2 table spoon of stuffing ( chana dal ) on it

And enclose it, seal the edges completely so that stuffing does not come out

Flatten again approximately 2.5 inch diameter

Heat sufficient oil in a pan for deep fry to medium flame

Drop puri or kachori one by one

Deep fry till both side golden brown and crisp

Drain the excess oil and put them in a plate with tissue paper

Now dal puri , dal kachori is ready

Serve it immediately hot with kheer and any chutney
