Today I am sharing with you a new recipe, Suran, also known as ol or Elephant Foot Yam Kofta Curry. Its a really tasty recipe and it uses Suran which is not used by many to prepare Koftas but this recipes has a different taste when compared to other Koftas. Suran / Elephant foot / Yam is a versatile that can be cooked in various way. It is more easily availble during the winter season. Serve this fresh for dinner / lunch along with phulka and rice. For Kofta
 ½ kg Suran(Ol or Elephant Foot yam)
 2 tbsp Cornflour
 2 tbsp Maida (Common Flour)
 1 tsp Gingergarlic Paste
 Salt to taste
 ½ tsp Turmeric
 1 tsp Chilli Powder
 Oil (For Frying)
 ½ tsp Black Pepper (Optional)
For Curry
  cup Yellow Mustard seeds
 2 tbsp Ginger garlic Paste
 2 Tomato or (as per taste)
 1 tbsp kitchen king masala
 1 tsp Chilli Powder, (Kashmiri red chili powder)
 1 tbsp coriander leaves finely chopped
 Oil as per your required
 2 Bay Leaves
 4 Cloves
 1 tsp Cumin Seeds
 1 tbsp Kashuri methi

Kofta

Take Suran in a large bowl and clean it with water.

Boil the well cleaned Suran util its soft. Separate it from water and let it dry.

Add cornflour, maida, ginger garlic paste, turmeric, chili powder, salt to taste along with black pepper

Mix well

Like a dough

Make small ball shaped koftas from the mixture.

Deep fry the koftas till they attain golden brown texture.

Keep aside

Grind Yellow Mustard seeds in a mixer-grinder and make a fine paste.

In a Frying Pan/Kadhai add 3-4 tbsp oil.

Add Cloves, Bay leaves, cumin seeds and hing and saute.

Add the mustard paste along ginger garlic paste to the frying pan,

After dry roasting for a while add salt, turmeric, chilli powder, a little kitchen king masala and keep stiring.

Dry-roast(Bhunna) the paste till it attains reddish brown color and doesn't taste raw.

Add tomato paste to the mixture and keep stiring it..

Add Kasuri methi

Dry roast it for a few mins and then add water(as per gravy demands).

Garnish with Coriander leaves

Now Add Fried Koftas to the Curry garnish with Coriander leaves
