Dhokla recipe is a traditional snack from fermented besan batter. it is basically originates from western India or particularly from the Gujarati cuisine.the recipe is a combination of sweet and sour taste, which is generally served as a snack but can also be served as morning breakfast. this dhokla is very tasty , soft and spongy , so you make try definitely and let me know in the comment section about your experience this recipe.

For Batter
150 g Besan / Gram flour
1 tbsp Rava / sooji fine / semolina
¼ tsp Hing / asafoetida
¼ tsp Turmeric powder
1 tsp Salt or as per taste
1 tsp Sugar
2 tbsp Cooking Oil
1 tsp Ginger and chili crushed or paste
½ tsp Citric acid
¼ tsp Baking sods
1 cup Water
For Tempering
2 tsp Oil
½ tsp Mustard seed
1 tsp Til / sesame
¼ tsp Hing / asafoetida
¼ cup Water
1 tsp Sugar
1 tsp Lemon juice
2 Green chilli , slit
Few curry leaves
For Garnishing
2 tbsp Coconut grated
2 tbsp Coriander leaves finely chopped
1 Firstly , in a large mixing bowl sieve besan and rava
2 Add hing , turmeric , salt , sugar
3 Mix well
4 Add 1 cup water or as required mix well
5 Wishk for 5 minutes
6 Or until the batter turns smooth silky consistency
7 Rest for 20 minutes , allowing besan to absorb water
9 Add crushed ginger chilli , oil mix well again whisk 2 minutes
10 Mix citric acid in 1 tsp water and pour them
11 Add baking soda
12 Mix gently till the batter turns frothy
13 Transfer to the garased container
14 Immediately steam the dhokla batter for 15 to 20 minutes till the dhokla gets cooked completely
15 Now cool the dhokla for 5 minutes and then unmolde it
16 Now spongy dhokla is ready
17 Cut the dhokla to the desired shape
18 Prepare the tempering , heat a pan with oil , add mustard ,sesame (till) seeds and hing
19 Few curry leaves and green chili allow to splutter
20 add water , sugar mix and boil the water and add lemon juice and mix well
21 Pour the tempering over dhokla
22 Garnish the dhokla with grated coconut and coriander leaves
23 Finally , serve instant khaman dhokla with green chutnet
24 Not : Firstly whisk the dhokla batter well before adding baking soda for soft and spongy dhokla.
Additionally , adding sugar to tempering is optional
