Balushahi is one of the traditional Indian sweets. It is usually made for weddings and festivals in India. Balushahi is a deliciously crunchy deep-fried dough disc that is cooled and then soaked in sugar syrup. Sweet and full of texture balushahi are time-consuming to make but the happiness you will get with the first bite itself is well worth it. 2 cups Refined flour
½ cup Ghee
2 cups Sugar
1 cup Water
1 tsp Baking powder
1 tsp Cardamom powder
10 Saffron strands ( optional )
Ghee or oil for frying
1 Take a bowl to add refined flour, baking powder
2 Mix well
3 Add ghee
4 Mix well again
5 Add cold water make the dough
6 Make sure you just bind it to keep aside for 10 to 15 minutes to set
8 Take a pan to add sugar
9 Add water to it, turn on the flame
10 Cook until the sugar dissolves in water
11 Stir it time to time
12 Intervals check it the last drop of sugar syrup should form a single thread sugar syrup is ready
13 Add cardamom powder and soaked saffron stir once
14 Keep aside cover it so that it doesn't cool down quickly
15 After 15 minutes dough is set and ready
16 Squash is slightly rolled it
17 Cut it Keep dough layered
18 Again Squash it and cut it
19 Keep dough layered by layered
20 Break the lump of dough make a roll from it and cut it a small ball
22 To shape the balushahi, lift a dough ball
23 Give it a round shape press it and make a bit hollow from both side
24 Place the shaped balushahi in a plate, make all balushahi likewise
25 Heat up a pan with ghee or oil
26 Check if the oil is sufficiently hot
27 Fry on low to a medium flame when golden brown from below
28 Flip them slightly increase flame and fry well
29 Until golden brown from all sides
30 When fried take it out the balushahi
31 Drop it in warm sugar syrup. dipped in sugar syrup for 2 hours
32 Tasty balushahi are ready
