Aloo parwal ki sabji(vegetable) is traditional yet simple recipe. Eaten in almost all households in Bihar and Jharkhand this recipe would surely leave your mouth licking and demanding for more. 250 g Parwal
3 Boiled potato medium
1 Onion medium chopped
1 tsp Garlic clove crushed
1 tsp Ginger crushed
½ tsp Green chili crushed
½ tsp Kashmiri lal mirch oiwder
1 tsp Kitchen king masala
2 tsp Sabji masala
1 tsp Turmeric powder
½ tsp Hing
1 tsp Cumin seeds
Salt to taste
Water for gravy

1 Scrap Parwal lightly with knife to remove the external layer, then wash the parwal and,cut the ends and chop them.
2 Heat oil in a pan and fry the parwal on medium flame till they become soft and golden brown
3 And keep aside
4 Then heat another 2 table spoons oil in the pan , add cumin seeds , when it splutter, add hing , chopped onion ginger,garlic green chili
5 And add boiled potatoes ,turmeric powder, add all remaining powders ,and stair time to time til light golden brown
6 ,and stair time to time til light golden brown
7 Then add the fried parwal and mix well with tie veggies
8 Add water for gravy per your requirement ,mix well and cover the lid for 5 minutes ,check the consistency if needed
9 Serve hot with rotis (chapati) or rice
10 Dont peel the skin of parwal completely it will become mushy
