Patori’s recipe is one such dish which can be relished not only by your family but guests too. This dish is made with besan. It is different from gaate ki sabji but gives a great taste and an amazing look to your meals. Besan katli ki sabji is a recipe that hails from north India , and is often prepared of decades ago , during monsoon “Besan ki Paneer”was to go to option for home cooks. Now days since monsoon doesn’t affect the availability of other veggies and seeing with their lives, this recipe is scarcely prepared.Serve this recipe along with rice, roti. For Besan katli (patori)
150 g Besan
1 tbsp Garlic Crushed
½ tbsp Green chili crushed
½ tsp Red chili powder
1 tsp Ajwaine
½ tsp Turmeric powder
Salt to taste
Water as per require
For Gravy
5 Onion medium size boild
1 tbsp Garlic paste (crushed)
1 tbsp Ginger paste (crushed)
½ tsp Green chili paste (crushed)
½ tsp Kashmeri red chili powder (as per taste)
2 tbsp Kitchen king masala
⅓ tsp Hing
1 tsp Cumin sheeds
1 Bay leaf
4 Cloves
1 tbsp Kashuri methi
Corrinder leaf
1 tbsp Meat masala (optional)
Water as per requirement
2 Tomato (grinded)
1 In a bowl add besan, Garlic, Green chili, ajwaine, tumeric powder and salt
2 Add water and mix well.
3 Heat a pan add the mixture and cook 6 to 7 min till it thickens.
4 Stir continuously with a spoon
5 Grease a plate and spread the mixture to fast
6 Keep it aside for cooling(about 5-6 mins)
7 Once cooled cut it in small pieces like katli (diamond shape).
8 Heat oil in a kadhai and deep fry the pieces till Golden brown
9 Keep the patori aside
10 Heat 3 tbsp oil in a pan add cumin sheed, hing, bay leaf, clove (long) then add boiled onion saute till light brown
11 Then add salt, turmeric powder, garlic,ginger, red chili powder, kitchen king masala and tomato, fry till golden brown
12 Then add kashuri methiand water as per requirement for gravy
13 Bring it to a boil then switch off the gas.
14 Add the fried besan patori and garnish with fresh coriander leaves
15 Serve hot with rice or chapati
