Kadai mushroom is an easy and quick dish and yet delicious.The kadai mushroom recipe can be made spicy and hot depending on the kind of red chilies you add.Kadai mushroom recipe -hot,spicy,flavorful and delicious mushroom dish made with fresh ground kadai masala.This spice powder that is used to cook the mushroom is the star of this recipe that lends a very unique flavor. Kadai mushroom gravy can be served with plain paratha,rice and naan.

(1CUP=250 ML)
For kadai masala
 ½ tbsp Coriander seeds or (sabut dhaniya)
 7 Dried red chilies, kashmiri (or less spicy variety) you don't like red chili you also add green chili
Other ingredients for kadai mushroom
 250 g Mushroom
 3 tbsp Oil
 10 Cashew nuts
 2 Medium Onions finely chopped
 2 Medium tomato finely chopped
 1 tsp Ginger-Garlic paste
 1 tsp Crushed kasuri methi (dried fenugreek leaves)
 1 Medium onion cubed ,layers separated
 1 Medium Capsicum cubed
 Salt as required
 Water as per required
 ¼ tsp Garam masala
 1 tbsp Chopped coriander leaves
 ½ tsp Red chili powder (just for color)
 4 Whole black pepper (sabut kalimirch)

First take a pan roast all the spices mentioned above for the kadai masala ,on a low flame till fragrant don't burn them .Once the spices cool down,add them to a grinder jar,grind them and keep aside.

Heat a pan with oil,add black pepper, chopped onion and saute them until they turn pink

Then add chopped tomatoes and salt as well. I don't like red chili so i add green chili

Mix and cook covered until the tomatoes turn completely soft

Add cashew nut to the pan cooked 2 minutes

Cool the onion,tomatoes completely.Then add them a blender jar

Make a smooth paste

Wash and slice mushroom before cooking them.

Add another tbsp of oil to the pan add mushroom stir & saute the mashroom

First you will see the mushroom releasing a lot of water

Then later the water evaporates saute till the mushroom get browned from the edges

Then add capsicum and onions. saute for 4 mins, keep aside

Add another tbsp of oil

Add few coriander seeds and ginger garlic paste and saute till their raw aroma disappears

Add the onion tomato paste stir and saute till you some oil releasing from the side

Add the ground kadai masala wich we made ,you can also,add red chili powder saute it very well until the mixture leaves the pan

Then add kasuri methi mix well

Add mushroom,capsicum and onion mix well.

Then add 1 cup water mix well to gravy . season with salt

you may need more water to bring it to consistency

Stir & bring the kadai mushroom gravy to a simmer on low flame till you see traces of oil over the gravy

Switch off the stove .Garnish kadai mushroom chopped coriander leaves

Serve kadai mushroom hot with rotis, parathas or naan
