Sabudana vada is a very popular dish in Maharashtrian cuisine but is equally popular in other nearby states too. It is generally served during the fasting and festival season across India. sabudana vada is a very crunchy, tasty, and spongy vada that will fill your stomach easily. A Maharashtrian snack that is eaten not only as a tea time snack but also as fasting or upvas / vrath food. Sabudana is one of the most commonly used ingredients during fasting days. 1 cup Sabudana / Sago / tapioca
2 Potato / aloo, boiled & mashed
½ cup Peanuts, roasted and crushed
½ tsp Black pepper powder
1 tsp Ginger crushed or grated
2 Green chili finely chopped
2 tbsp Coriander leaves finely chopped
1 tsp Lemon juice
Salt as per your taste
Oil for frying
1 Firstly in a large bowl take 1 cup sabudana and soak with water for overnight or 4 hours
2 Take a large bowl to add soaked sabudana
3 Also, add potato
4 Add peanuts
5 Add ginger, chili, salt, and black pepper powder
6 Add coriander leaves
7 Mix and mash well with your hand, this is very important
8 Prepare a soft dough. if you are not able from the dough then add another boiled potato and mash well
9 Make a vada from sabudana mixture
10 Deep fry the vada in hot oil. or preheat air fryer and fry 190-degree Celcius for 20 minutes
11 Fry on medium flame until they turn golden brown flipping in between
12 Drain off over a kitchen towel remove excess oil
13 Finally, sabudana vada is ready
14 Serve sabudana vada hot along with Tea or sauce
