For the kofta mash together paneer and potato

Add chopped coriander, ginger, green chili, salt, black pepper

Add cornflour and chopped dry fruits

Mix them well

Shape into round balls or oblong

Heat oil in a pan

Add kofta for frying

Deep fry the kofta till golden brown

For the curry heat oil butter together

Add black cardamom, green cardamom, bay leaf, clove, caraway seeds (jeera )

Stir for 15 second

Now add chopped onions

Cooked 5 mins

Add chopped ginger, garlic, and green chili

Cooked for another 3 minutes

Add turmeric powder, coriander powder, and cumin powder

Mix well and add chopped tomato

Now add salt and cashew nuts

Cook for another 5 to 7 minutes cover the lead

Add 1/2 cups of water and cover till tomatoes are mashy

Now switch off the gas and let it cool for 3 to 4 minutes

Now using a blender

Blend it into a fine puree

Strain the puree in a pan

Bring it to a boil

Add Kasuri methi

Add honey or sugar

Can add water if the curry is too thick

Add cream

Stir and remove from gas

Place the kofta in a serving plate

Pour the hot curry on top

Know malai kofta is ready to serve it
