 250 g Amla ( Gooseberry )
 1 tsp Ghee
 ½ tsp Hing ( Asafoetida )
 1 tsp Fennel seeds ( Sauff )
 ½ tsp Kalonji ( Nigella saativa )
 250 g Jaggery
 ½ tsp Black pepper powder
 1 tsp Black salt
 ½ tsp White salt as per your taste
 ½ tsp Roasted cumin seeds powder
 ½ tsp Turmeric powder
 1 tsp Red chilli powder
 ½ tsp Garam masala

Take a bowl add water and pour the amla ( gooseberry ) & Cooked till the soft

Cool it

Remove the seed

Slightly crushed the amla pieces, do not make a fine paste, Little mashed it

In a pan heat ghee

Add hing, saunf, and kalonji ( asafoetida, fennel, nigella seeds )

Crackle 2 minutes

Add boiled mashed amla Stir 4 minutes, stair on a low flame

Add jaggery, continue cooking on slow flame

Mix well

Jaggery becomes melted then

Add all spices black salt, black pepper powder, cumin powder turmeric powder, gram masala and salt

lastly add red chilli powder mix well

Cooked another 3 minutes, not to over cook

When you get the desired consistency Switch off the gas . Remember it will be thickened little more once it cool down.

Know Amla ki khatti meethi chutney is ready

Cool it and store it a glass jar, it can last up to a month

 250 g Amla ( Gooseberry )
