
Chop cauliflower in a small pieces rinse them very well and keep aside
Now add enough hot water so that all the florets are covered . Covered and blanch the florets for 15 minutes
Drain the gobi florets well and keep aside
Take a bowl add maida, corn flour, tumeric powder, red chili powder, coriander powder, garam masala, black pepper powder, salt, and food color( optional) mix well all ingredients
Add water make thick batter and add cauliflower florets mix well
keep aside for 5 mins
Heat oil in a pan, place the batter coated cauliflower florets in the hot oil
Fry one side and when it becomes crisp, turn over and fry the other side
Fry them evenly, till they are golden and crisp,fry them in batches
Remove the fried cauliflower florets and place them on kitchen paper to absorb extra oil keep aside
Now remove the extra oil from the pan and keep 2 tsp oil in it add mustard seeds and crackle them
Add chopped garlic, ginger stir and saute till 3 mins then add spring onion, gren chili stir and saute 2 mins.
Add fresh curd mix well add black pepper powder, salt mix well
Add the fried cauliflower florets toss and stir the whole mixture add lemon juce,
switch off the flame garnish with coriander leaves
Now gobi 65 is ready sprinkle chat masala and serve it
