For the Vadas
250 g Urad dal (split black lentils)
salt to taste
For the topping
1 cup Dahi (Curds)
½ tsp Chili powder
½ tsp Roasted cumin seeds (jeera) powder for sprinkling
Black salt (sanchal) for taste
1 tbsp Khajur imli (tamarind) ki chutney
½ tsp Maggi hot&sweet tomato sauce
1 tbsp Finely chopped coriander (dhaniya)
Chaat masala for sprinkling
1 Clean,wash and soak the daal overnight or 7 to 8 hrs.
2 Separate the water and grind them into smooth paste without water or necessary then very little water
3 Take out the paste in a bowl and then beat the mixture for 5-10 minutes till the mixture becomes fluffy.This will make the vadas soft add salt
4 Heat oil in a pan for frying and drop small balls of batter in the oil . The flame should be medium
5 Till they turn light golden brown in color from all the sides
6 Drain on absorbent paper. keep aside
7 Take enough water in a deep bowl and soak the vadas
8 Prepare the dahi (curd) beat the curd smooth add salt red chili powder
9 Squeeze out all the excess water from the vadas and flatten lightly between your palms
10 Arrange the vadas on a serving dish
11 And pour dahi (curd) over them
12 Pour imli (Tamarind) chutney
13 Pour hot &sweet tomato sauce
14 And sprinkle cumin seeds powder , Chaat masala and garnish with coriander
15 Serve the dahi vadas immediately
